  1. Preheat the oven to 175°C. Butter the insides of 3 pans (each 6 inches high). Sprinkle a little flour over each pan. Mash them flat so the bottom is covered, then turn them on their sides and flip them over so the sides are covered. Shake off excess flour.
  2. Prepare a cup of hot chocolate according to the directions (use water, not milk). Cover and set aside.
  3. In a bowl, whisk together the flour, cocoa powder, sugar, salt, baking powder and baking soda until smooth.
  4. Using an electric mixer fitted with a whisk attachment, beat the butter and milk on low speed until smooth. Switch to medium-high speed and add the eggs one at a time. Add the vanilla extract.
  5. Iron on low speed. Gradually add the warm chocolate and flour mixture until everything is well blended.
  6. Divide the dough between the chosen number of moulds. Bake for 40-45 minutes or until a toothpick inserted into the center of the crust comes out clean.
  7. Remove the crusts and let them cool for 10 minutes in a pan. Remove them from the pan and let them cool on a wire rack.

  1. Using a mixer with a whisk, beat marshmallows, butter, powdered sugar and vanilla extract until fluffy.
  2. Add the milk by tablespoons to adjust the consistency.

  1. Using a sharp bread knife or chef’s knife, carefully cut out the domes at the top of the patties in a straight horizontal line.
  2. Spread the marshmallow icing evenly to use on each cake. Using a spatula, spread the icing on the top of each cake.
  3. Stack the cakes on top of each other, starting at the bottom so the icing stays on. Layer the marshmallows on top of the cake for decoration. Serve the cake or seal and freeze.
